Introduction
Shahi Paneer is a royal and creamy North Indian dish made with paneer (Indian cottage cheese) cooked in a rich, aromatic gravy of cashews, cream, and exotic spices. This Mughlai-inspired dish pairs perfectly with naan, roti, or jeera rice.

  • For the Gravy Base:
  • 2 tbsp oil or ghee
  • 1 tbsp butter
  • 1 bay leaf
  • 2 green cardamoms
  • 1- inch cinnamon stick
  • 1 tsp cumin seeds
  • 1 large onion (chopped)
  • 2 tomatoes (chopped)
  • 10-12 cashews
  • 4-5 cloves garlic (chopped)
  • 1- inch ginger (chopped)
  • For the Final Gravy:
  • 200 g paneer (cut into cubes)
  • 1/2 cup fresh cream
  • 1/2 cup milk
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp coriander powder
  • 1 tsp sugar (optional)
  • Salt to taste
  • 1/4 cup yogurt (curd)
  • 1 tbsp kasuri methi (dried fenugreek leaves)
  • 1/2 tsp cardamom powder
  • 1 tbsp chopped coriander leaves
  1. Instructions
  2. Step 1: Prepare the Gravy Base
  3. Heat oil and butter in a pan. Add bay leaf, cardamoms, cinnamon stick, and cumin seeds.
  4. Once they crackle, add chopped onions and sauté until golden brown.
  5. Add chopped tomatoes, garlic, ginger, and cashews. Cook until tomatoes turn mushy.
  6. Let the mixture cool, then blend into a smooth paste using a little water.
  7. Step 2: Cook the Shahi Gravy
  8. Heat 1 tbsp butter in a pan. Add the blended paste and cook for 2-3 minutes.
  9. Add turmeric, red chili powder, coriander powder, and salt. Mix well.
  10. Stir in yogurt and cook for another 2 minutes, stirring continuously.
  11. Pour in milk and let the gravy simmer for 3-4 minutes.
  12. Add cream and mix well for a rich texture.
  13. Step 3: Add Paneer & Finishing Touches
  14. Add paneer cubes and mix gently. Let it simmer for 2-3 minutes.
  15. Add sugar (optional), garam masala, kasuri methi, and cardamom powder.
  16. Garnish with chopped coriander leaves and a drizzle of fresh cream.

Serving Suggestions
Serve hot with naan, roti, or jeera rice.

Pair with cucumber raita and salad for a complete meal.
